1. Garlic butter oyster mushrooms

Simple yet full of flavour, these garlic butter oyster mushrooms make the perfect side dish or a delicious topping for toast. The blend of garlic, butter, and fresh herbs brings out the mushrooms' natural, earthy taste, making it one of our must-try recipes.

Ingredients:

  • 200g oyster mushrooms, cleaned and torn into bite-sized pieces
  • 3 tbsp butter
  • 3 cloves garlic, minced
  • Salt and pepper, to taste
  • 1 tbsp fresh parsley, chopped

Instructions:

  1. Clean the oyster mushrooms by gently brushing off any dirt. Tear them into bite-sized pieces for even cooking.
  2. In a large skillet, melt the butter over medium heat. Be careful not to burn it; you want it to melt slowly and turn a light golden colour.
  3. Add the minced garlic to the pan. Cook for about 1 minute, stirring frequently, until the garlic is fragrant but not browned.
  4. Add the mushrooms to the pan, spreading them out so they cook evenly. Let them cook without stirring for the first 2-3 minutes to allow them to brown, then toss and cook for another 3-4 minutes until they’re golden and tender.
  5. Sprinkle with salt and pepper to taste, and garnish with freshly chopped parsley. Serve hot as a side dish or over toast.

2. Creamy oyster mushroom pasta

This creamy pasta dish combines the savoury flavour of oyster mushrooms with a rich, velvety sauce. It’s comforting, easy to make, and perfect for a cosy night in.

Ingredients:

  • 200g oyster mushrooms, sliced
  • 300g pasta (fettuccine or spaghetti works best)
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Boil a pot of salted water and cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining. Set the cooked pasta aside.
  2. While the pasta is cooking, slice the oyster mushrooms and dice the onion and garlic.
  3. In a large pan, heat olive oil over medium heat. Add the diced onion and cook for about 3 minutes, stirring occasionally, until soft and translucent. Add the minced garlic and cook for another minute.
  4. Toss the sliced oyster mushrooms into the pan. Cook for about 5-6 minutes, stirring occasionally, until the mushrooms are tender and have released their juices.
  5. Lower the heat to medium-low and pour in the heavy cream. Let it simmer gently for 5 minutes, stirring occasionally. If the sauce gets too thick, add a bit of the reserved pasta water to thin it out.
  6. Mix in the grated parmesan cheese and cooked pasta. Stir well to coat the pasta with the creamy sauce. Season with salt and pepper to taste.
  7. Serve hot, garnished with freshly chopped parsley and enjoy!

3. Oyster mushroom tacos

These vegetarian tacos are full of flavour and texture, with the oyster mushrooms acting as a delicious meat substitute. Perfect for Taco Tuesday or – if you love mushrooms as much as we do – any night of the week!

Ingredients:

  • 250g oyster mushrooms, shredded
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1/2 tsp chilli powder
  • Salt and pepper, to taste
  • 8 small tortillas
  • Toppings: avocado, shredded lettuce, salsa, sour cream

Instructions:

  1. Clean and shred the oyster mushrooms into thin strips. You can use your hands to tear them apart for a more rustic texture.
  2. Heat olive oil in a skillet over medium heat. Add the shredded mushrooms and cook for about 5 minutes, stirring occasionally until they begin to brown and crisp up around the edges.
  3. Sprinkle in the smoked paprika, cumin, and chilli powder. Stir well to make sure the mushrooms are evenly coated. Cook for another 2-3 minutes until the spices are fragrant. Season with salt and pepper to taste.
  4. While the mushrooms are cooking, warm the tortillas in a dry pan over medium heat or wrap them in foil and heat them in the oven at 180°C (350°F) for about 5 minutes.
  5. Place a generous portion of the mushroom filling on each tortilla and top with avocado, lettuce, salsa, and sour cream as desired. Serve immediately.
  6. Serve the tacos hot, with a side of lime wedges for an extra zesty kick.
